Ingredients
- 1 cup uncooked quinoa

- 1–2 cloves garlic
- ¼ cup plant-based yogurt or olive oil
- Juice and zest of two limes
- 1 can white beans (15 oz)
- ⅓ cup red onion
- ½ cucumber
