  • 16 oz full fat cream cheese, cool room temperature
  • 1/2 cup unsalted butter, cool room temperature
  • 1/2 tsp salt
  • 2 tsp vanilla extract
  • 5 cups powdered sugar, sifted

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 8-inch round cake pans.
  2. In one bowl, mix flour, baking powder, baking soda, salt, and spices.
  3. In another bowl, whisk together coconut oil, sugar, eggs, buttermilk, and vanilla until smooth.
  4. Combine wet and dry ingredients gently; fold in grated carrots.
  5. Divide batter into prepared pans. Bake for 26-28 minutes until a toothpick comes out clean.
  6. Cool cakes completely on a wire rack before frosting.
  7. Beat cream cheese and butter until creamy; add vanilla and powdered sugar until smooth.
