Ingredients
- 1 ½ lbs lean ground beef
- 1 cup diced onion
- ¾ cup bread crumbs
- ⅓ cup broth (or water)
- 2 eggs
- 1 tsp tomato paste
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp salt
- ¼ tsp ground black pepper
- ¾ cup ketchup
- 1 Tbsp white vinegar
Instructions
- Preheat the oven to 350°F and line a baking sheet with aluminum foil.
- In a large mixing bowl, combine ground beef, chopped onion, bread crumbs, broth, eggs, garlic powder, onion powder, salt, pepper, and tomato paste. Mix until just combined.
- Shape the mixture into a loaf or pack it into a greased loaf pan and invert onto the baking sheet.
- Bake uncovered for 40 minutes. Meanwhile, mix ketchup and vinegar in a small bowl.
- After 40 minutes, spread the ketchup mixture over the top of the meatloaf and return to the oven for another 10 minutes.
- Allow to rest for 10 minutes before slicing; serve warm.
