  • 1 cup breadcrumbs
  • ½ cup milk
  • 2 large eggs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • ¼ cup ketchup
  • 1 tablespoon plant-based Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ⅓ cup ketchup (for glaze)
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a loaf pan.
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, milk, eggs, onion, garlic, ketchup, plant-based Worcestershire sauce, salt, and black pepper. Mix just until combined.
  3. Transfer the mixture to the prepared loaf pan and shape it into a loaf.
  4. In a small bowl, mix together the glaze ingredients: ketchup, brown sugar, apple cider vinegar, and Dijon mustard until smooth. Spread half of this glaze over the meatloaf.
  5. Bake in the preheated oven for about 45 minutes. After removing from the oven, spread the remaining glaze on top and bake for an additional 15 minutes or until cooked through.
  6. Let it rest for about 10 minutes before slicing to retain moisture.
