- 2 TBSP Instant coffee
- 2 1/2 cups All-purpose flour
- 1 cup Unsalted butter (melted and cooled)
- 1 cup Brown sugar (packed)
- 1/2 cup White granulated sugar
- 2 Large eggs (room temperature)
- 1 1/2 cups Semi-sweet chocolate chips
- 1 tsp Ground cinnamon
- 1/2 tsp Baking soda
- 1/2 tsp Baking powder
- 1 tsp Salt
Instructions
- Preheat your oven to 350°F (175°C) and line two cookie sheets with parchment paper.
- In a food processor, blend the instant coffee into a fine powder. In a medium bowl, sift together flour, baking soda, baking powder, salt, and ground cinnamon.
- In a large bowl, mix melted butter, brown sugar, white sugar, vanilla extract, and eggs until fully combined.
- Gradually add dry ingredients to the wet mixture using a rubber spatula until just combined; do not overmix. Fold in chocolate chips.
