Ingredients
- 3 lb boneless chuck roast
- 3 lbs yellow onions
- 2 cloves garlic
- 1 cup red apple vinegar or beef stock
- 2 ½ cups beef stock
- 1 tbsp extra virgin olive oil
- 1/2 tsp fine sea salt
- 1/2 tsp freshly ground black pepper
- 1 tbsp maple syrup or brown sugar
- 1 tbsp all-purpose flour or gluten-free all-purpose flour
- 2 tbsp extra virgin olive oil
- 1 sprig rosemary
- 1 bay leaf
Instructions
- Slice the onions thinly and mince the garlic.
- Sear the seasoned chuck roast in olive oil over medium-high heat until browned (about 4-5 minutes per side).
- In the same skillet, cook sliced onions and garlic until softened (15-20 minutes). Stir in maple syrup/brown sugar and flour; cook for an additional minute.
- Transfer the roast to a slow cooker or Instant Pot. Layer with cooked onion mixture and pour in vinegars/stock along with rosemary and bay leaf.
- Cook on low for 6-8 hours (slow cooker) or high pressure for 60-70 minutes (Instant Pot). Allow natural release.
