  • 15.5 oz black-eyed peas
  • 15 oz sweet corn
  • 1 cup fresh cilantro
  • ½ cup red bell pepper
  • ½ cup orange bell pepper
  • ½ cup red onion
  • 1 tsp chili powder
  • ½ tsp kosher salt
  • ¼ cup granulated sugar
  • ½ cup olive oil
  • ⅓ cup white grape juice vinegar
  • 1 tbsp fresh lime juice
  • ¼ tsp garlic powder

Instructions

  1. Drain and rinse the black beans and black-eyed peas under cold water; pat dry.
  2. In a large mixing bowl, combine the beans, corn, cilantro, red bell pepper, orange bell pepper, and red onion; mix gently.
  3. In a separate bowl, whisk together the dressing ingredients until smooth.
