- 2 pounds ground beef
- 1 cup canned pinto beans (drained, rinsed)
- 1 cup BBQ sauce (divided)
- 1 cup sharp cheddar cheese (shredded)
- ½ cup plain breadcrumbs
- 2 large eggs (beaten)
- 1 small yellow onion (finely diced)
- 1 green bell pepper (finely diced)
- 1 tablespoon vegetable oil
- 1 teaspoon garlic (minced)
- 1 tablespoon Worcestershire sauce
- 2 teaspoons chili powder
- 2 teaspoons kosher salt
- ½ teaspoon cayenne
- ½ teaspoon black pepper
Instructions
- Preheat your oven to 350°F and lightly spray a loaf pan with nonstick cooking spray.
- In a skillet over medium heat, sauté the diced onion and green pepper in vegetable oil until softened. Add minced garlic and cook for an additional minute.
- In a large bowl, combine the cooled vegetables with ground beef, eggs, pinto beans, breadcrumbs, ½ cup BBQ sauce, Worcestershire sauce, chili powder, salt, cayenne pepper, and black pepper. Mix gently until just combined.
- Transfer half of the mixture into the prepared loaf pan, creating a shallow trench down the middle. Fill with shredded cheese and cover with the remaining meat mixture.
- Brush the top with ¼ cup of BBQ sauce and bake for 40 minutes. Brush with remaining BBQ sauce and return to bake for another 25-30 minutes or until the internal temperature reaches 160°F. Allow resting for 5 minutes before slicing.
