  • 1 lb ground beef
  • ½ cup breadcrumbs
  • 1 large egg
  • ¼ cup milk
  • 4 cups beef broth
  • 1 cup heavy cream
  • 1 medium onion, diced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 3 tbsp all-purpose flour
  • ½ tsp nutmeg
  • ½ tsp salt (or to taste)
  • ½ tsp black pepper
  • 2 cups egg noodles or diced potatoes
  • 1 tbsp fresh parsley, chopped (optional)
  • 2 tbsp butter

Instructions

  1. In a large bowl, mix ground beef, breadcrumbs, egg, milk, onion powder, garlic powder, salt, and black pepper until combined. Form into 1-inch meatballs.
  2. Brown meatballs in a skillet over medium heat for about 4-5 minutes until golden. Set aside.
  3. In a large pot, melt butter and sauté diced onion, carrots, and celery for 5-7 minutes until softened. Stir in flour to create a roux.
  4. Gradually whisk in beef broth and bring to a simmer. Add nutmeg, salt, pepper, and browned meatballs along with egg noodles or potatoes.
  5. Simmer for 10-12 minutes until noodles or potatoes are tender. Stir in heavy cream and heat through before serving.
