- 1 lb ground beef
- ½ cup breadcrumbs
- 1 large egg
- ¼ cup milk
- 4 cups beef broth
- 1 cup heavy cream
- 1 medium onion, diced

- 2 celery stalks, diced
- 3 tbsp all-purpose flour
- ½ tsp nutmeg

- 2 cups egg noodles or diced potatoes

Instructions
- In a large bowl, mix ground beef, breadcrumbs, egg, milk, onion powder, garlic powder, salt, and black pepper until combined. Form into 1-inch meatballs.
- Brown meatballs in a skillet over medium heat for about 4-5 minutes until golden. Set aside.
- In a large pot, melt butter and sauté diced onion, carrots, and celery for 5-7 minutes until softened. Stir in flour to create a roux.
- Gradually whisk in beef broth and bring to a simmer. Add nutmeg, salt, pepper, and browned meatballs along with egg noodles or potatoes.
