  • 5 tablespoons unsalted butter
  • 3 tablespoons heavy cream
  • Pinch of salt
  • 1 teaspoon orange or vanilla extract (optional)
  • 1/3 cup finely chopped dried cranberries
  • 1/3 cup finely chopped toasted pistachios
  • 1/2 cup powdered sugar

Instructions

  1. In a small saucepan over low-medium heat, melt the butter. Stir in heavy cream until combined and remove from heat.
  2. Add a pinch of salt and optional extract; set aside.
  3. Using a double boiler, melt the chopped white chocolate while stirring gently until smooth, ensuring it does not exceed 105°F.
  4. Combine the melted chocolate with the butter and cream mixture using a rubber spatula.
  5. Stir in chopped cranberries and pistachios until evenly distributed. Cover with plastic wrap and let sit at room temperature for one hour.
  6. Refrigerate for 2-3 hours until firm.
  7. Scoop out mixture using a melon baller or spoon, rolling into inch-sized balls.
  8. Roll each truffle in powdered sugar until well coated.
