  • 2 rings (13 ounces each) turkey sausage, sliced into ¼-inch pieces
  • 3 tablespoons unsalted butter
  • 1 large yellow onion, chopped (about 1 cup)
  • 2 medium carrots, diced (about 1 cup)
  • 2 teaspoons garlic, minced
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ¼ cup all-purpose flour
  • 3 cups chicken broth
  • 1 cup whole milk
  • 2 cans (15 ounces each) Great Northern white beans, rinsed and drained
  • Fresh parsley for garnish

Instructions

  1. Heat vegetable oil in a large pot over medium-high heat. Add sliced turkey sausage and cook until browned on both sides, approximately 7-9 minutes. Remove and set aside.
  2. In the same pot, melt butter and sauté chopped onion, carrots, garlic, salt, and pepper for about 10-12 minutes until softened.
  3. Sprinkle flour over vegetables and stir for one minute to eliminate raw flavor.
  4. Gradually add chicken broth and milk while stirring. Bring to a simmer.
  5. Return turkey sausage to the pot along with rinsed white beans.
  6. Reduce heat to medium-low and simmer for about 15-20 minutes until thickened.
