  • 500g minced chicken
  • 1 egg
  • 1 cup breadcrumbs
  • 2 tbsp milk
  • 2 cloves garlic, finely chopped
  • 1 tsp Italian herb blend
  • Salt & pepper
  • 1 onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 cup chicken stock
  • ½ cup heavy cream
  • 2 tbsp tomato paste

Instructions

  1. In a mixing bowl, combine minced chicken, egg, breadcrumbs, milk, chopped garlic, Italian herb blend, salt, and pepper. Mix until well combined then shape into small balls.
  2. Heat olive oil in a skillet over medium heat and sear the meatballs until golden brown on all sides. Remove and set aside.
  3. In the same skillet, sauté onion until translucent. Add red and yellow bell peppers and minced garlic; cook until softened.
  4. Stir in smoked paprika, chicken stock, heavy cream, and tomato paste; season with salt and pepper.
  5. Return the meatballs to the skillet and simmer for about 10-12 minutes until cooked through.
