Ingredients
- 500g minced chicken
- 1 egg
- 1 cup breadcrumbs
- 2 tbsp milk
- 2 cloves garlic, finely chopped
- 1 tsp Italian herb blend
- Salt & pepper
- 1 onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- 1 cup chicken stock
- ½ cup heavy cream
- 2 tbsp tomato paste
Instructions
- In a mixing bowl, combine minced chicken, egg, breadcrumbs, milk, chopped garlic, Italian herb blend, salt, and pepper. Mix until well combined then shape into small balls.
- Heat olive oil in a skillet over medium heat and sear the meatballs until golden brown on all sides. Remove and set aside.
- In the same skillet, sauté onion until translucent. Add red and yellow bell peppers and minced garlic; cook until softened.
- Stir in smoked paprika, chicken stock, heavy cream, and tomato paste; season with salt and pepper.
- Return the meatballs to the skillet and simmer for about 10-12 minutes until cooked through.
