- 1 package broccoli florets (14 or 16 oz.)
- 1 cup shredded mild or medium cheddar cheese, divided
- 1 can cream of mushroom soup (10 3/4 oz.)
- 1/4 cup mayonnaise
- 1/4 cup milk
- 1 egg, lightly beaten
- 1/8 tsp. salt
- 1 1/2 cups cracker crumbs (Ritz and/or Keebler Club)
- 1/4 cup butter, melted
Instructions
- Thaw broccoli and microwave for about 5 minutes until warm; drain well.
- In a mixing bowl, combine the thawed broccoli, half of the cheddar cheese, cream of mushroom soup, mayonnaise, milk, beaten egg, and salt. Spoon into a greased baking dish and top with remaining cheese.
- In another bowl, mix cracker crumbs with melted butter until moistened; sprinkle over the broccoli mixture.
- Preheat oven to 350°F (175°C) and bake for 45 – 50 minutes until bubbly with a light golden brown topping.
