- 1 cup Cherry Tomatoes
- 1/2 Red Bell Pepper
- 1/2 Yellow Onion
- 1 Tbsp Olive Oil
- 1/2 tsp Crushed Red Pepper
- 1 1/2 cups Medium Shells (dried pasta)
- 8 oz Fresh Chicken Sausage
- 4 cups Fresh Baby Spinach
- 1/2 cup Half & Half
- 1/3 cup Finely Grated Parmesan Cheese
- Juice of 2 wedges Fresh Lemon
Instructions
- Prepare the vegetables by quartering the cherry tomatoes and chopping the bell pepper and onion.
- In a large skillet over medium heat, sauté the prepared vegetables in olive oil with salt and crushed red pepper for about 7-8 minutes until softened.
- Cook medium shells in boiling salted water until al dente, then add to the skillet.
