Ingredients
- 2 chicken breasts, cut into 1” pieces
- ½ tsp garlic powder
- Salt & pepper, to taste
- Flour, for dredging
- 3 tbsp olive oil, divided
- 1 tbsp butter
- 8 oz cremini mushrooms, sliced
- ½ medium onion, chopped
- 1 tbsp Dijon mustard, or more to taste
- ⅔ cup chicken broth
- ½ cup full-fat sour cream
Instructions
- Season chicken pieces with garlic powder, salt, pepper, and flour.
- Heat 2 tablespoons of olive oil in a skillet over medium-high heat and sear the chicken until browned on all sides. Set aside.
- In the same skillet, melt butter over medium heat. Add sliced mushrooms and chopped onions; sauté until soft and golden.
- Stir in Dijon mustard and minced garlic; cook for about 1 minute until fragrant.
- Pour in chicken broth and scrape up any flavorful bits from the skillet. Return the seared chicken; cook for an additional 2 minutes until heated through.
- Gently stir in sour cream without boiling. Adjust seasoning as needed and serve immediately over pasta, rice, or mashed potatoes.
