  • 2 tablespoons butter
  • 3 cloves garlic (minced)
  • 1 small onion (finely diced)
  • 1 cup heavy cream (or half & half for a lighter option)
  • ½ cup chicken broth
  • ½ teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • ½ teaspoon dried oregano
  • ½ cup grated Parmesan cheese
  • 1 cup basmati rice (rinsed)
  • 2 cups chicken broth
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons fresh parsley (chopped)
  • 1 teaspoon lemon zest (optional, for brightness)

Instructions

  1. Heat olive oil in a skillet over medium heat. Season the chicken with garlic powder, onion powder, Italian seasoning, paprika, salt, and black pepper. Sear until golden brown on both sides (5-7 minutes). Remove from skillet.
  2. In the same skillet, melt butter and sauté garlic and onion until translucent. Add heavy cream and chicken broth; stir well. Mix in dried herbs and Parmesan cheese, simmering until slightly thickened.
  3. Stir in rinsed basmati rice and additional chicken broth with salt and pepper. Nestle the seared chicken atop the rice mixture.
  4. Cover and simmer on low heat for about 20 minutes until the rice is cooked through.
  5. Fluff rice with a fork before serving and garnish with fresh parsley.
