  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 3 cups potatoes, diced
  • 2 cups carrots, diced
  • 2 cups celery, diced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 2 cups shredded cheddar cheese
  • 1 cup heavy cream

Instructions

  1. In a large skillet over medium heat, brown the ground beef until fully cooked. Drain any excess grease and transfer it to a slow cooker.
  2. Sauté the diced onion and minced garlic in the same skillet for about 2-3 minutes until softened. Add this mixture to the slow cooker.
  3. Combine the beef broth, diced potatoes, carrots, celery, undrained tomatoes, Worcestershire sauce, dried basil, oregano, salt, and pepper in the slow cooker. Stir well.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours until vegetables are tender.
  5. About 30 minutes before serving, stir in the shredded cheddar cheese and heavy cream until the soup is creamy.
