Description

Crockpot chicken hamburger Potato Casserole is the perfect solution for busy weeknights when you crave a warm, hearty meal. This easy-to-make dish features layers of savory ground beef, tender potatoes, and gooey melted cheese enveloped in a creamy mushroom sauce.


Ingredients

  • 1 lb ground beef
  • 45 medium russet or Yukon gold potatoes
  • 1 medium onion
  • 2 cups shredded cheddar cheese
  • 1 can cream of mushroom soup
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • Fresh parsley or chopped chives

Instructions

  1. In a skillet over medium heat, cook ground beef and chopped onion until browned (about 5-7 minutes). Drain excess fat.
  2. Thinly slice potatoes to about 1/8 inch thick.
  3. In the crockpot, layer half of the sliced potatoes, followed by half of the cooked beef mixture and some cheese. Repeat with remaining ingredients.
  4. In a mixing bowl, whisk together cream of mushroom soup, milk, garlic powder, salt, and pepper until smooth. Pour evenly over layered ingredients.
  5. Cover and cook on low for 6 to 8 hours until potatoes are tender.
  6. About 15 minutes before serving, top with remaining cheese and cover to melt.
