  • 16 ounces chicken sausage (or turkey sausage)
  • 1/2 medium onion (chopped)
  • 4 cloves garlic (minced)
  • 2 medium carrots (sliced or chopped)
  • 2 sticks celery (chopped finely)
  • 1 (28-ounce) can crushed tomatoes
  • 1 (14-ounce) can diced tomatoes (with juices)
  • 4 cups chicken broth
  • 2 (9-ounce) packages refrigerated cheese tortellini
  • 2 cups fresh baby spinach
  • Optional: 3/4 cup heavy cream
  • Salt & pepper to taste

Instructions

  1. In a skillet, sauté chicken sausage and onions over medium heat for about 7–8 minutes until browned. Drain excess fat if necessary.
  2. Add minced garlic to the skillet and cook for an additional 30 seconds before transferring the mixture to the Crockpot.
  3. Add carrots, celery, crushed tomatoes, diced tomatoes, and chicken broth into the Crockpot.
  4. Cook on low for 7–8 hours or high for 3–4 hours.
  5. About 30 minutes before serving, stir in cheese tortellini and spinach; season with salt and pepper.
