Description

  • 68 beef sausages
  • 2 onions (sliced)
  • 2 carrots (peeled and sliced)
  • 2 celery stalks (chopped)
  • 2 cloves garlic (minced)
  • 400 g (14 oz) tin of chopped tomatoes
  • 250 ml (1 cup) beef or vegetable broth
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 800 g (about 1.75 lbs) potatoes, thinly sliced
  • Olive oil for drizzling
  • Fresh parsley (optional)

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a large ovenproof skillet, heat olive oil over medium heat and brown the sausages for about 5-7 minutes before removing them.
  3. Sauté the onions, carrots, celery, and garlic in the same skillet until softened.
  4. Stir in chopped tomatoes, broth, tomato paste, thyme, salt, and pepper; bring to a simmer.
  5. Return sausages to the skillet and layer thinly sliced potatoes on top.
  6. Drizzle with olive oil and season with salt and pepper.
  7. Cover and bake for 45 minutes; remove cover and bake for an additional 15-20 minutes until potatoes are golden brown.
  8. Let sit briefly before serving; garnish with fresh parsley if desired.
