  • 1 cup cooked quinoa
  • 1 cup grated zucchini
  • 1 cup grated carrot
  • 1 can chickpeas (lightly mashed)
  • 1 cup bell pepper (any color)
  • 2 tbsp soy sauce
  • 1 cup breadcrumbs (or gluten-free alternative)
  • 1 large egg (or flax egg)

Instructions

  1. Prepare your ingredients by cooking the quinoa and grating the zucchini and carrot.
  2. In a large mixing bowl, combine cooked quinoa, grated zucchini, carrot, mashed chickpeas, bell pepper, breadcrumbs, soy sauce, garlic powder, onion powder, ground cumin, smoked paprika, salt, and pepper. Add the egg or flax egg if using.
  3. Form the mixture into patties about ½ inch thick.
  4. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. Place patties on the sheet and brush with olive oil.
  5. Bake for about 20 minutes until golden brown and crispy on both sides, flipping halfway through.
