  • 3 cups fresh rhubarb, diced
  • 1 cup granulated sugar (divided)
  • 1 cup unsalted butter, softened
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • Pinch of salt
  • 1 tbsp lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and grease or line a baking dish with parchment paper.
  2. In a bowl, mix diced rhubarb with ½ cup granulated sugar and lemon juice; let sit to enhance flavor.
  3. In another bowl, cream together softened butter and remaining sugar until fluffy. Add flour, baking powder, and salt to form a dough.
  4. Press two-thirds of the dough into the bottom of the prepared baking dish. Pour the rhubarb mixture on top and crumble the remaining dough over it.
  5. Bake for 35-40 minutes or until golden brown. Allow to cool completely before cutting into squares.
