Ingredients
- ½ cup prunes (roughly chopped)
- ½ cup dried cherries (roughly chopped)
- 1 cup Dr. Pepper soda
- 1 cup unsalted butter (room temperature)
- ¼ cup cocoa powder
- ½ cup boiling water
- ½ cup buttermilk
- 3 large eggs (room temperature)
- 2 cups all-purpose flour
- 1⅓ cups granulated sugar
- ½ teaspoon baking soda
- 1½ teaspoons vanilla extract
- ½ teaspoon nutmeg
- ½ teaspoon ginger
- ½ teaspoon all spice
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a mixing bowl, whisk together flour, cocoa powder, baking soda, nutmeg, ginger, and all spice.
- In another bowl, cream butter and sugar until smooth; add eggs one at a time followed by buttermilk and vanilla.
- Gradually mix in the Dr. Pepper soda into the wet mixture.
- Combine dry ingredients with the wet mixture until well blended.
- Pour batter into the prepared pan and bake for about 34 minutes or until a toothpick comes out clean.
- Cool before frosting with a mixture of melted butter and confectioners' sugar whisked with additional Dr. Pepper.
