- 4 pieces Turkey Bacon, diced
- 1 small white onion, finely diced
- 1 jalapeno, diced (or more for extra heat)
- 4 garlic cloves, minced
- 1 (12-ounce) bottle dark Mexican beef broth
- 4 (15-ounce) cans pinto beans, rinsed and drained
- 1 Tablespoon brown sugar
- 1 teaspoon dried oregano
- 1 teaspoon chili powder
- 1 teaspoon salt
- 1/2 teaspoon cumin
- 1 Tablespoon fresh lime juice
- 1/4 cup chopped fresh cilantro
Instructions
- Cook the diced turkey bacon in a large sauté pan over medium-high heat until crispy. Remove and set aside.
- In the same pan, sauté onion and jalapeno in the reserved grease until soft. Add minced garlic and sauté until fragrant.
- Stir in beef broth and pinto beans along with brown sugar and spices. Bring to a simmer.
- Reduce heat to medium-low and let simmer uncovered for about 15 minutes.
- Stir in reserved turkey bacon and fresh lime juice before serving topped with chopped cilantro.
