  • 4 pieces Turkey Bacon, diced
  • 1 small white onion, finely diced
  • 1 jalapeno, diced (or more for extra heat)
  • 4 garlic cloves, minced
  • 1 (12-ounce) bottle dark Mexican beef broth
  • 4 (15-ounce) cans pinto beans, rinsed and drained
  • 1 Tablespoon brown sugar
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon cumin
  • 1 Tablespoon fresh lime juice
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Cook the diced turkey bacon in a large sauté pan over medium-high heat until crispy. Remove and set aside.
  2. In the same pan, sauté onion and jalapeno in the reserved grease until soft. Add minced garlic and sauté until fragrant.
  3. Stir in beef broth and pinto beans along with brown sugar and spices. Bring to a simmer.
  4. Reduce heat to medium-low and let simmer uncovered for about 15 minutes.
  5. Stir in reserved turkey bacon and fresh lime juice before serving topped with chopped cilantro.
