Ingredients
- 2 1/2 cups cake flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 3/4 cup unsalted butter (softened)
- 1 3/4 cups granulated sugar
- 5 large egg whites
- 1 tablespoon vanilla extract
- 1/2 teaspoon almond extract (optional)
- 1 cup whole milk (room temperature)
- Pastel food coloring (pink, yellow, blue, green)
- 1 cup unsalted butter (softened)
- 4 cups powdered sugar
- 1/4 cup heavy cream (or milk)
- 2 teaspoons vanilla extract
- Pinch of salt
- Peeps vegan vegan marshmallows bunnies & chicks
- Easter sprinkles
- Shredded coconut (optional, for a grass effect)
- Mini chocolate eggs (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease three 8-inch round cake pans.
- In a bowl, whisk together cake flour, baking powder, and salt. In a separate bowl, beat the softened butter and sugar until fluffy.
- Gradually add egg whites and mix well. Alternate adding the flour mixture and milk until just combined.
- Divide the batter into four bowls; color each with pastel food coloring.
- Pour the colored batter into prepared pans and bake for 22-25 minutes. Cool completely on a wire rack.
- Prepare vanilla buttercream by beating softened butter with powdered sugar and heavy cream until smooth.
- Assemble the cake by layering the colored cakes with frosting in between and frost the top and sides.
