Description

Easter Salad is a vibrant and refreshing dish that captures the essence of spring with its bright flavors and colorful ingredients. This delightful salad combines sweet strawberries, creamy goat cheese, and crunchy slivered almonds atop a bed of fresh mixed greens, all beautifully dressed with a zesty Lemon Honey Vinaigrette. Ingredients

  • 1 cup slivered almonds
  • 12 ounces mixed spring greens
  • 16 ounces strawberries (washed, hulled, & sliced)
  • 4 ounces crumbled goat cheese
  • 1/2 cup sunflower oil or extra-virgin olive oil
  • 5 tablespoons freshly-squeezed lemon juice
  • 2 tablespoons honey
  • Sea salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F. Spread slivered almonds on a baking sheet and toast for 5 to 7 minutes until fragrant. Set aside to cool.
  2. In a Mason jar, combine sunflower oil, lemon juice, honey, sea salt, and pepper. Shake vigorously until well mixed.
  3. In a large bowl, layer the mixed greens, followed by sliced strawberries, toasted almonds, and crumbled goat cheese. Drizzle with the Lemon Honey Vinaigrette just before serving and toss gently.
