- ½ head green cabbage, shredded
- 1 cup bell peppers, sliced (any color)
- 1 medium carrot, julienned
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, minced
- 3 tbsp low-sodium soy sauce
- 1 tbsp sesame oil
- 1 tbsp rice vinegar
Instructions
- Prepare all ingredients by washing and slicing vegetables. Thinly slice the beef against the grain.
- In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, minced garlic, and ginger. Set aside.
- Heat a large skillet or wok over medium-high heat with a splash of oil until shimmering.
- Cook the beef in batches if necessary until browned on both sides (about 3–4 minutes). Remove from pan.
- In the same pan, add cabbage, bell peppers, and carrots. Stir-fry for about 5 minutes until tender yet crisp.
- Return the beef to the pan along with the prepared sauce. Toss everything together for another minute or two until heated through.
