  • 500 g Beef mince
  • 1 Onion (chopped)
  • 4 Large tortillas
  • 250 g Microwave rice pouch (Mexican-flavored)
  • 200 g Fresh salsa
  • 400 g Black beans (drained and rinsed)
  • 125 g Grated mozzarella
  • 2 tsp Sunflower oil
  • 1 tsp Mild chilli powder
  • 1 tsp Sweet smoked paprika
  • 2 tsp Ground cumin
  • 1 tbsp Dark brown sugar
  • 3 tbsp Tomato puree
  • 1 Beef stock cube (Undiluted and crumbled)
  • 100 ml Boiling water
  • Salt and freshly ground black pepper

Instructions

  1. Heat sunflower oil in a large sauté pan over medium heat. Add beef mince and cook until browned (about 5 minutes), breaking it up with a wooden spoon.
  2. Stir in chopped onion, mild chilli powder, sweet smoked paprika, ground cumin, and dark brown sugar. Cook for an additional 5 minutes until onions soften.
  3. Mix in tomato puree, crumbled beef stock cube, boiling water, salt, and pepper. Cover and simmer for 15 minutes until thickened.
  4. Prepare tortillas and microwave rice as per package instructions.
  5. Assemble burritos by placing rice, beef mixture, fresh salsa, black beans, and grated mozzarella on each tortilla. Roll tightly.
