- 3 cups uncooked pasta
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 small red onion, chopped
- 1/2 cup Kalamata olives
- 3 mini cucumbers, chopped
- 1 cup little tomatoes (halved)
- 5 ounces crumbled feta
- 2 tablespoons red apple vinegar
- 3 tablespoons olive oil
- 1/2 teaspoon Dijon mustard
- 1 clove garlic, minced
- 1 teaspoon fresh parsley, chopped
- 1/2 teaspoon dried oregano
- 1 teaspoon (packed) brown sugar
- Salt & pepper to taste
Instructions
- Cook pasta in salted boiling water until al dente; drain and cool under running water.
- In a jar with a lid, combine dressing ingredients and shake until well mixed.
- In a large bowl, mix cooled pasta with chopped vegetables and olives; pour dressing over and toss to combine.
- Season with salt and pepper to taste; serve immediately or refrigerate for at least one hour to enhance flavors.
