Description

Easy Greek Pasta Salad is a delightful blend of Mediterranean flavors that’s perfect for summer gatherings, BBQs, or potlucks. This vibrant dish combines fresh vegetables, feta cheese, and pasta into a satisfying meal that’s both healthy and colorful.


Ingredients

  • 3 cups uncooked pasta
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 small red onion, chopped
  • 1/2 cup Kalamata olives
  • 3 mini cucumbers, chopped
  • 1 cup little tomatoes (halved)
  • 5 ounces crumbled feta
  • 2 tablespoons red apple vinegar
  • 3 tablespoons olive oil
  • 1/2 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1 teaspoon fresh parsley, chopped
  • 1/2 teaspoon dried oregano
  • 1 teaspoon (packed) brown sugar
  • Salt & pepper to taste

Instructions

  1. Cook pasta in salted boiling water until al dente; drain and cool under running water.
  2. In a jar with a lid, combine dressing ingredients and shake until well mixed.
  3. In a large bowl, mix cooled pasta with chopped vegetables and olives; pour dressing over and toss to combine.
  4. Season with salt and pepper to taste; serve immediately or refrigerate for at least one hour to enhance flavors.
