Ingredients

  • 4 small zucchinis
  • 2 tablespoons high-quality olive oil
  • 2 tablespoons Greek seasoning
  • 3/4 cup crumbled feta cheese
  • Fresh parsley for garnish

Instructions

  1. Wash and trim the ends of the zucchinis, then cut them lengthwise into quarters.
  2. Brush both sides generously with olive oil and sprinkle with Greek seasoning.
  3. Preheat a stovetop grill pan over medium-high heat.
  4. Grill zucchini pieces flat side down for about 3 minutes until grill marks appear, then flip and cook for another 3 minutes.
  5. Turn zucchini skin side down and grill for an additional 3-4 minutes until tender.
  6. Transfer to a serving platter, sprinkle with feta cheese and fresh parsley before serving.
