Description

Easy Grilled Vegetables are a summer staple that brings the vibrant flavors of fresh produce to your table. This delightful dish combines zucchini, sweet onion, and red bell pepper, marinated in Italian dressing to enhance their natural sweetness and smoky taste. Ingredients

  • 2 medium zucchini
  • 1 large sweet onion
  • 1 large red bell pepper
  • 1/2 cup Italian salad dressing
  • Salt and fresh ground black pepper

Instructions

  1. Cut the zucchini lengthwise into slices.
  2. Peel and cut the onion into individual layers.
  3. Halve the red bell pepper, remove seeds and stem, then slice.
  4. Marinate chopped vegetables in a Ziploc bag with Italian dressing for 4-6 hours.
  5. Preheat grill pan on medium-high heat.
  6. Drain vegetables before grilling to prevent flare-ups.
  7. Grill for about 15-20 minutes until slightly charred but crisp.
