  • 1 cup unsalted butter (softened)
  • 4 large eggs (room temperature)
  • 2 tablespoons lemon zest (from 23 lemons)
  • ⅓ cup fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar (for glaze)
  • 23 tablespoons fresh lemon juice (for glaze)
  • 1 tablespoon lemon zest (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper.
  2. In one bowl, whisk flour and salt. In another bowl, cream butter and sugar until fluffy.
  3. Add eggs one at a time to the butter mixture, mixing well after each addition. Stir in lemon zest, lemon juice, and vanilla.
  4. Fold in the flour mixture gently until just combined.
  5. Pour batter into the prepared pan and bake for 25-30 minutes or until a toothpick comes out clean.
  6. Cool completely before glazing with a mixture of powdered sugar, lemon juice, and zest.
