Ingredients
- 1 lb ground beef
- 4 cups chicken broth
- 1 can (14 oz) crushed tomatoes
- 1 can (14 oz) diced tomatoes with juices
- 2 cans (14 oz each) red kidney beans and cannellini beans
- 3 sticks celery, chopped finely
- 1 medium onion, chopped
- 2 medium carrots, peeled and chopped finely
- 2 teaspoons minced garlic
- 1/2 tablespoon red apple vinegar
- 1/2 teaspoon Italian seasoning
- 1/2 tablespoon sugar
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/4 teaspoon crushed red pepper flakes optional (or add more to taste)
- Salt (to taste)
- Pepper (to taste)
Instructions
- In a soup pot over medium-high heat, brown the ground beef until cooked.
- Add chopped onion, celery, carrots, and minced garlic; sauté for 8-10 minutes until softened.
- Stir in crushed tomatoes, diced tomatoes, drained beans, chicken broth, vinegar, sugar, Italian seasoning, oregano, basil, and red pepper flakes. Bring to a boil.
- Reduce heat to low and let it simmer partially covered for 15-20 minutes.
- Add uncooked ditalini pasta; continue simmering until tender (15-20 minutes). Stir occasionally to prevent sticking.
- Adjust seasoning with salt and pepper before serving.
