  • 1 lb ground beef
  • 4 cups chicken broth
  • 1 can (14 oz) crushed tomatoes
  • 1 can (14 oz) diced tomatoes with juices
  • 2 cans (14 oz each) red kidney beans and cannellini beans
  • 3 sticks celery, chopped finely
  • 1 medium onion, chopped
  • 2 medium carrots, peeled and chopped finely
  • 2 teaspoons minced garlic
  • 1/2 tablespoon red apple vinegar
  • 1/2 teaspoon Italian seasoning
  • 1/2 tablespoon sugar
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes optional (or add more to taste)
  • Salt (to taste)
  • Pepper (to taste)

Instructions

  1. In a soup pot over medium-high heat, brown the ground beef until cooked.
  2. Add chopped onion, celery, carrots, and minced garlic; sauté for 8-10 minutes until softened.
  3. Stir in crushed tomatoes, diced tomatoes, drained beans, chicken broth, vinegar, sugar, Italian seasoning, oregano, basil, and red pepper flakes. Bring to a boil.
  4. Reduce heat to low and let it simmer partially covered for 15-20 minutes.
  5. Add uncooked ditalini pasta; continue simmering until tender (15-20 minutes). Stir occasionally to prevent sticking.
  6. Adjust seasoning with salt and pepper before serving.
