- 1.5 pounds boneless, skinless chicken thighs
- 0.5 cup soy sauce
- 0.25 cup rice vinegar
- 2 tablespoons brown sugar
- 1 tablespoon freshly grated ginger
- 1 cup white rice
- 1 bell pepper, thinly sliced
- 1 small onion, thinly sliced
- 0.5 cup fresh pineapple, diced (plus extra for garnish)
- Fresh cilantro and green onions for garnishing
Instructions
- Cut chicken thighs into bite-sized pieces. In a medium bowl, whisk together 0.25 cup soy sauce, 2 tablespoons rice vinegar, 1 tablespoon brown sugar, ginger, and garlic. Add chicken pieces and marinate for at least 20 minutes.
- Cook the white rice according to package instructions; optionally replace half of the water with coconut milk for added creaminess.
- While marinating, slice bell pepper and onion. Dice fresh pineapple, reserving some for garnish.
- Heat oil in a large skillet over medium-high heat. Sear marinated chicken until golden brown (about 5–7 minutes). Remove from skillet.
- In the same skillet, sauté bell pepper and onion until softened (3–5 minutes). Return chicken to skillet.
- Whisk together remaining soy sauce, rice vinegar, brown sugar, and cornstarch in a small bowl; pour over chicken and vegetables in skillet. Cook until thickened (2–3 minutes).
- Spoon cooked rice onto plates; top with chicken mixture and garnish with cilantro, green onions, and reserved pineapple.
