- 1/2 cup canned diced tomatoes (drained)

- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the bell peppers by slicing off the tops and removing seeds. Stand them upright in a baking dish.
- In a mixing bowl, heat olive oil in a pan over medium heat. Sauté onions and garlic until translucent.
- Add zucchini and mushrooms; cook until tender. Mix in cooked rice, tomatoes, black beans (or chickpeas), and spices until well combined.
