  • 12 slices thinly sliced beef
  • 1 pack enoki mushrooms (split into 12 pieces)
  • 1/2 small yellow onion (sliced)
  • 1 cup dashi broth
  • 2 large eggs
  • 3 tablespoons soy sauce
  • 1/4 teaspoon black pepper
  • Garnish: green onion and sesame seeds

Instructions

  1. Prepare the enoki mushrooms by dividing them into small bunches and rolling each with a slice of beef.
  2. In a bowl, mix together the dashi broth, soy sauce, sugar, and black pepper until well combined.
  3. In a skillet, heat olive oil over medium heat and sauté the sliced onions until caramelized.
  4. Add the beef rolls to the skillet in a single layer and drizzle the sauce over them. Cover and cook for about 5 minutes, flipping halfway through.
  5. Scramble the eggs in a bowl and pour over the rolls in the skillet; simmer until fully cooked.
