Ingredients

  • 3 small beets (or 2 medium)
  • 140g feta cheese
  • 100g Greek yogurt
  • ½ tbsp olive oil, plus more for drizzling
  • ¼ lemon juice
  • A handful of chopped roasted pistachios
  • Fresh dill, chopped
  • Sea salt and black pepper to taste
  • ½ tbsp date syrup
  • 1 tbsp apple cider vinegar

Instructions

  1. Cut the beets in half and boil in salted water for about 20 minutes until tender.
  2. While the beets cook, whisk together feta, Greek yogurt, and lemon juice until smooth and creamy.
  3. After cooking and cooling, toss sliced beets with apple cider vinegar, date syrup, and olive oil; let rest for 5 minutes.
  4. Spread whipped feta on a serving plate, layer with marinated beets, sprinkle chopped pistachios and dill on top, then drizzle with olive oil and season with pepper.
