Ingredients
- 3 small beets (or 2 medium)
- 140g feta cheese
- 100g Greek yogurt
- ½ tbsp olive oil, plus more for drizzling
- ¼ lemon juice
- A handful of chopped roasted pistachios
- Fresh dill, chopped
- Sea salt and black pepper to taste
- ½ tbsp date syrup
- 1 tbsp apple cider vinegar
Instructions
- Cut the beets in half and boil in salted water for about 20 minutes until tender.
- While the beets cook, whisk together feta, Greek yogurt, and lemon juice until smooth and creamy.
- After cooking and cooling, toss sliced beets with apple cider vinegar, date syrup, and olive oil; let rest for 5 minutes.
