  • 2 lbs Yukon Gold or Russet potatoes
  • 2 large onions
  • 2 tbsp butter or olive oil
  • 1 packet onion soup mix or 1 cup condensed French onion soup
  • 1 cup beef or vegetable broth
  • 1 cup shredded Gruyère cheese (or cheddar, Swiss, mozzarella)
  • ½ cup sour cream
  • Salt & pepper to taste

Instructions

  1. Caramelize sliced onions in a skillet over medium heat with butter until golden brown (20-25 minutes).
  2. In a mixing bowl, combine sour cream, onion soup mix (or condensed soup), broth, half of the cheese, and caramelized onions.
  3. Layer half of the potato slices in a greased baking dish, followed by half of the onion mixture. Repeat layers and top with remaining cheese.
  4. Cover with foil and bake at 375°F (190°C) for 30 minutes; remove foil and bake for an additional 15-20 minutes until golden.
