Ingredients

  • 2 cups flour
  • 5 1/4 oz butter
  • 1 egg yolk
  • 1 pinch sea salt
  • 5 tbsp cold water
  • 7 oz zucchini
  • 5 1/4 oz shredded cheese (cheddar, gouda, or feta)
  • 5 1/4 oz cream
  • 2 eggs plus extra egg white
  • 1 pinch ground nutmeg
  • Optional: sun-dried tomatoes and green onion/chives

Instructions

  1. Prepare the pastry dough by mixing flour and salt in a bowl. Incorporate butter until crumbly, then add egg yolk and water. Chill for 15 minutes.
  2. Preheat oven to 375°F (190°C).
  3. Roll out the chilled dough to about 1/8 inch thickness and cut into circles for tartlet pans or muffin tins.
  4. Grate zucchini and mix with eggs, cream, nutmeg, cheese, and optional ingredients in a bowl.
  5. Place dough circles in pans and fill with the zucchini mixture.
  6. Bake for approximately 25 minutes until golden brown.
