  • 8 ounces orzo pasta
  • 1 cup green peas
  • 1 1/2 cups chopped asparagus
  • 45 cups fresh arugula leaves
  • 3 tablespoons chopped basil
  • 3 tablespoons chopped mint
  • 4 ounces crumbled feta cheese
  • 1/3 cup extra virgin olive oil
  • 1 large or 2 small shallots, peeled and thinly sliced
  • 2 tablespoons red wine vinegar
  • Juice and zest of half a lemon
  • 1 teaspoon honey
  • 1/2 teaspoon dijon mustard
  • Sprinkle of salt and pepper
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Cook orzo in salted boiling water until al dente. Drain and cool.
  2. Chop asparagus; combine with peas and arugula in a bowl.
  3. Whisk dressing ingredients together in a separate bowl.
  4. Mix cooled orzo with vegetables; toss with dressing.
  5. Add feta on top and gently mix.
  6. Garnish with parsley before serving.
