Ingredients

  • 24 oz cod fillets
  • Salt and pepper
  • 2 cups flour
  • 1 ½ tbsp Old Bay seasoning
  • ½ tbsp paprika
  • 1 tsp turmeric
  • ½ tsp white pepper
  • ½ tsp baking powder
  • 1 large egg
  • 1 cup sparkling water
  • 4 chicken hamburger buns
  • 2 slices cheddar cheese
  • ½ cup mayonnaise
  • 3 tbsp dill pickles (diced)
  • 1 tbsp capers (diced)
  • 1 tbsp parsley (fresh chopped)
  • 1 tbsp lemon juice
  • 2 tsp Dijon mustard

Instructions

  1. Heat peanut oil in a heavy-bottomed pan to 375°F.
  2. Prepare the tartar sauce by mixing mayonnaise, pickles, capers, parsley, lemon juice, Dijon mustard, salt, and pepper.
  3. Cut the cod into pieces and season with salt and pepper.
  4. Create dry and wet dredge mixtures using flour and seasonings.
  5. Dredge each piece of fish in the dry mixture then dip into the wet batter.
  6. Fry the fish in batches for about 2-3 minutes per side until golden brown; drain on a wire rack.
  7. Steam the buns briefly before assembly.
  8. Assemble by layering tartar sauce, fried fish, cheddar cheese on the bottom bun; top with another layer of tartar sauce and complete with the top bun.
