- 24 oz cod fillets
- Salt and pepper
- 2 cups flour
- 1 ½ tbsp Old Bay seasoning
- ½ tbsp paprika
- 1 tsp turmeric
- ½ tsp white pepper
- ½ tsp baking powder
- 1 large egg
- 1 cup sparkling water
- 4 chicken hamburger buns
- 2 slices cheddar cheese
- ½ cup mayonnaise
- 3 tbsp dill pickles (diced)
- 1 tbsp capers (diced)
- 1 tbsp parsley (fresh chopped)
- 1 tbsp lemon juice
- 2 tsp Dijon mustard
Instructions
- Heat peanut oil in a heavy-bottomed pan to 375°F.
- Prepare the tartar sauce by mixing mayonnaise, pickles, capers, parsley, lemon juice, Dijon mustard, salt, and pepper.
- Cut the cod into pieces and season with salt and pepper.
- Create dry and wet dredge mixtures using flour and seasonings.
- Dredge each piece of fish in the dry mixture then dip into the wet batter.
- Fry the fish in batches for about 2-3 minutes per side until golden brown; drain on a wire rack.
- Steam the buns briefly before assembly.
- Assemble by layering tartar sauce, fried fish, cheddar cheese on the bottom bun; top with another layer of tartar sauce and complete with the top bun.
