Ingredients

Scale
  • 6 boneless skinless chicken breasts
  • 1/2 cup olive oil
  • 3 tablespoons fresh-squeezed lemon juice
  • 1 tablespoon garlic powder
  • 2 teaspoons Spike Seasoning (or another all-purpose seasoning blend)
  • 2 teaspoons dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried sage
  • 1/2 teaspoon black pepper
  • Fresh parsley for garnish

Instructions

  1. Trim any excess fat from the chicken breasts and ensure they are of even thickness.
  2. Score the chicken with shallow cuts for better marinade absorption.
  3. In a bowl, mix olive oil, lemon juice, garlic powder, seasonings, and herbs until combined.
  4. Marinate the chicken in a Ziploc bag or container for at least 5 hours, ideally overnight.
  5. Preheat your grill to medium-high heat and drain excess marinade from the chicken.
  6. Grill each breast without moving for about 3-4 minutes per side until cooked through (internal temperature should reach 165F/74C).
  7. Let rest briefly before serving hot or using in wraps and salads.
