Description

This glazed mimosa bread is a bright and citrusy loaf inspired by the classic brunch cocktail. Ingredients

For the Bread:
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup granulated sugar
2 large eggs
1/2 cup orange juice (freshly squeezed preferred)
1/4 cup milk
1/2 cup unsalted butter, melted
1 tablespoon orange zest
1 teaspoon vanilla extract

For the Glaze:
1 cup powdered sugar
2–3 tablespoons orange juice
1/2 teaspoon orange zest


Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, whisk together sugar and eggs until light and slightly fluffy.
  4. Add orange juice, milk, melted butter, orange zest, and vanilla extract. Mix until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 45–50 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow the bread to cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely.
  9. In a small bowl, whisk together powdered sugar, orange juice, and zest to make the glaze.
  10. Drizzle the glaze over the cooled bread before slicing and serving.
