Ingredients
- 5 cups all-purpose flour
- 1/2 cup sugar
- 2.5 tsp salt
- 1/4 cup sourdough starter
- 1 cup water
- 1/2 cup milk
- 12 oz unsalted butter (for layering)
- 4 tbsp pistachio paste
- 2 cups milk (for cream filling)
- 3 tbsp chopped pistachios
- 1/2 tsp almond essence
- 1/2 tsp yeast
- green food coloring
Instructions
- In a stand mixer, combine flour, sugar, salt, sourdough starter, water, milk, melted butter, almond essence, and yeast. Mix until fully combined.
- Knead the dough until smooth. Shape into a ball, let rise in a warm place for about 2 hours until doubled in size, then refrigerate for an hour.
- Roll out the chilled dough into a rectangle and encase cold unsalted butter within it by folding the dough over.
- Roll out again to create layers and cut triangles from the dough. Place pistachio paste at the base of each triangle before rolling up tightly.
- Preheat your oven to 375°F (190°C). Bake croissants on a parchment-lined baking sheet for about 25 minutes or until golden brown.
