  • 1 (8 oz) center-cut beef filet
  • 1 tbsp olive oil
  • 2 tbsp Dijon mustard
  • 1 cup finely chopped mushrooms (cremini or button)
  • 1 tbsp butter
  • 2 cloves garlic, minced
  • 1 tbsp fresh thyme leaves
  • 3 slices turkey
  • 1 sheet puff pastry
  • 1 egg yolk (for egg wash)
  • Salt and pepper to taste

Instructions

  1. Sear the Beef: Season the beef with salt and pepper. Heat olive oil in a skillet over high heat and sear the filet for 1–2 minutes on each side until browned. Remove from heat and brush with Dijon mustard while warm.
  2. Make Mushroom Duxelles: Finely chop mushrooms using a chef’s knife. In the same skillet, melt butter over medium heat, then add garlic and thyme; sauté until fragrant. Add mushrooms and cook until moisture evaporates; cool completely.
  3. Assemble: Lay turkey slices flat on plastic wrap overlapping slightly, spread mushroom mixture evenly on top, place beef in center, roll tightly using plastic wrap; chill for 15 minutes.
  4. Wrap in Puff Pastry: Roll out puff pastry on a floured surface. Remove plastic wrap from meat roll and place it on pastry. Wrap beef with pastry; seal edges with egg wash and brush top with yolk.
  5. Bake: Preheat oven to 400°F (200°C). Place wrapped Wellington on baking sheet; bake for 15–20 minutes until golden brown. Let rest for 5 minutes before slicing.
