Ingredients
- ¾ cup Greek yogurt (non-fat)
- 1 cup self-raising flour (or all-purpose flour)
- 1 teaspoon baking powder (if using all-purpose flour)
- 2 ½ cups fresh spinach (packed)
- 100g feta cheese
- Salt and black pepper to taste
- Olive oil for frying
Instructions
- Prepare the Dough: In a large bowl, combine flour, salt, and Greek yogurt. If using all-purpose flour, add baking powder. Mix until it forms a rough ball, then knead for 3–5 minutes until smooth. Let it rest for 10 minutes.
- Prepare the Filling: Scrunch chopped spinach in a bowl to soften it. Crumble in feta cheese and season with salt and pepper.
- Shape the Gozleme: Divide the dough into two balls; roll each into thin circles. Spread half of the filling on one half of each circle, fold over, and seal the edges tightly.
- Cook: Heat olive oil in a frying pan over medium heat. Cook each Gozleme for 3–5 minutes per side until golden brown.
