  • 1 lb ground beef and/or lamb
  • 1/2 cup breadcrumbs
  • 1/4 cup milk or chicken broth
  • 1 small onion, finely grated
  • 2 garlic cloves, minced
  • 1 large egg
  • 1/4 cup Greek yogurt (optional)
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp fresh mint, chopped (optional)
  • 1 tsp dried oregano or 1 tbsp fresh oregano
  • 1 tsp lemon zest
  • 1/2 tsp ground cumin (optional)
  • Salt and pepper to taste
  • Olive oil for cooking
  • 2 cups chicken broth
  • Juice of 2 large lemons

Instructions

  1. Soak breadcrumbs in milk or chicken broth for 5-10 minutes.
  2. In a mixing bowl, combine soaked breadcrumbs with ground meat, onion, garlic, egg, yogurt (if using), herbs, lemon zest, salt, and pepper. Mix gently and chill for 30 minutes.
  3. Form the mixture into uniform meatballs.
  4. Heat olive oil in a skillet over medium heat; fry meatballs until browned on all sides.
  5. In a saucepan, sauté garlic in olive oil; add chicken broth, lemon juice, herbs, salt, and pepper. Bring to simmer.
  6. Add browned meatballs to the sauce; cover and simmer for 10-15 minutes until cooked through.
