Ingredients
- 3 cups cooked pasta (rotini or penne)
- 1 ½ cups cherry tomatoes, halved
- 1 cup cucumber, diced
- ½ cup red bell pepper, diced
- ½ cup red onion, thinly sliced
- ¾ cup kalamata olives, sliced
- 1 cup feta cheese, crumbled
- ¼ cup fresh parsley, chopped
- ¼ cup olive oil
- 2 tablespoons red apple vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Juice of half a lemon
Instructions
- Cook the pasta in salted boiling water until al dente. Drain and rinse under cold water.
- In a small bowl, whisk together olive oil, vinegar, lemon juice, Dijon mustard, oregano, garlic powder, salt, and pepper.
- In a large mixing bowl, combine cooked pasta with cherry tomatoes, cucumber, red bell pepper, red onion, kalamata olives, and feta cheese.
