  • 1 1/2 pounds chicken breast or thighs (cubed)
  • 2 tablespoons lemon juice
  • 1 tablespoon extra virgin olive oil
  • 2 teaspoons za’atar
  • 1 clove crushed garlic
  • 1 1/4 teaspoon kosher salt
  • fresh ground black pepper (to taste)
  • 3/4 cup plain low-fat yogurt
  • 3/4 cup cucumber (chopped)
  • 1 tablespoon lemon juice
  • 1/2 tablespoon fresh dill (chopped)
  • 1/2 tablespoon fresh mint (chopped)
  • 1/2 teaspoon kosher salt
  • fresh black pepper (to taste)
  • 2 tablespoons fresh parsley (for garnish)
  • lemon wedges (for serving)

Instructions

  1. In a bowl, mix lemon juice, olive oil, za’atar, garlic, salt, and pepper. Add chicken cubes and coat well. Cover and refrigerate for at least 2 hours.
  2. Combine yogurt, cucumber, lemon juice, dill, mint, salt, and pepper in another bowl. Chill until serving.
  3. Preheat your grill over medium-high heat.
  4. Thread marinated chicken onto skewers.
  5. Cook for 15-20 minutes until fully cooked and juices run clear.
  6. Enjoy hot with lemon wedges and cucumber yogurt sauce.
