  • 1 lb boneless skinless chicken breasts (grilled)

  • 1/3 cup sun-dried tomatoes (drained and chopped)

  • 1/4 cup olive oil
  • 2 Tbsp fresh lemon juice
  • 1 Tbsp red apple vinegar
  • 1 1/2 Tbsp finely minced fresh parsley
  • 1 garlic clove (minced)
  • 1 tsp dried basil
  • 1/4 tsp dried oregano
  • 1/2 tsp honey
  • 1/2 tsp dijon mustard
  • Salt and freshly ground black pepper

Instructions

  1. In a mixing bowl, whisk together olive oil, lemon juice, apple cider vinegar, parsley, garlic, basil, oregano, honey, mustard, salt, and pepper to make the dressing.
